Every year Mother’s Day races up to greet us and we find ourselves woefully unprepared. What do you do for your mom or the mother of your kids? How do you show her you appreciate her when everyone seems to be selling the same gaudy gifts as last year? You spend some time making the Ultimate Mother’s Day Brekkie, that’s what you do! We know that not everyone has mastered cooking; so we have compiled a few of our favourite breakfast hacks so you can spend less time in the kitchen; because let’s face it, moms are ninjas and are probably out of bed and dressed for the day while you’re still snoring under a pile of cuddly duvet.

 

Omelette Sous Vide

Its name sounds more complicated than it really is – cooking an omelette in a bag in boiling water. What you’ll need is a few Ziploc bags, two eggs per person, some water and fillings of your choice. First, get a pot of water on to boil; then, add the eggs, a tablespoon of water, your fillings and a dash of salt and pepper to the Ziploc bag. Press any excess air out of the bag and zip seal before sloshing, squishing and shaking your eggy mixture. Place directly into the boiling water and leave for approximately 12 minutes, or until set. Remove the bag from the pot, unzip and carefully slide the omelette onto a plate. Present to mom with a sprinkling of fresh parsley over the top and a piping hot cup of coffee on the side.

Parfait Me

If mom is a fruit fan and prefers a continental-style breakfast, then this is the recipe for you; it takes barely any work and is so easy to plate up beautifully. This is also a great one for the kids to prepare for mom themselves! Find a glass jar (a recycled jam jar is perfect!) and layer; crumbly granola, thick luscious Greek yoghurt and tart berries. Decorate with fresh mint leaves or a sprinkling of cinnamon and you’re good to go! This dish can be customised so you can really get creative. Try an apple pie version with crushed biscuits instead of granola or serve a mini no-bake meringue, using lemon curd, plain yoghurt, crushed meringues and citrus zest.

Poached Egg-cellence

Mother’s Day is rather special so why not kick it up a notch and make these easy poached eggs? In a standard muffin tin, pour a tablespoon of water into each cup and crack one glorious egg into each hole. You could cook up to 12 eggs at a time this way! If you’re not prepping for 12, simply add extra water into the cups you aren’t using to make sure the heat is distributed evenly across the muffin pan while baking. Bake in a preheated oven of 180°C for about 12 minutes – this will give you perfectly silky, runny centres. Serve on toast with smashed avocado and spinach. Bon Appetit!

Oh Crêpe!

This German-style {fat} pancake is heavenly dusted with icing sugar and dollops of fruit preserve or fresh berries. Simply whisk together three large eggs, two tablespoons of melted and unsalted butter, half a cup of milk and a tablespoon of sugar, while your oven heats to 230°C. Lightly fold in, half a cup of flour and pour the mixture into a non-stick sprayed cast iron skillet. The skillet should be in the oven for up to 15 minutes or when you first see the edges begin to darken. Serve with a glass of sparkling wine on a tray alongside fresh cut flowers.
